Head chef Kent Rathbun, formerly of The Mansion, serves up highly original blends of Asian and Southwest cuisine. The lobster scallion "shooters," bite-sized lobster morsels served with red chile coconut sake, are one of the most inventive entrées on the menu. When asked how the hip restaurant came to be named after an ancient Chinese counting instrument--basically a low-tech calculator--our waiter, only half-jokingly, said owners found amusing the idea of some patrons needing an abacus to check their tabs. Ferre 3699 McKinney, Dallas TX 75204; Tel. 214.522.3888 Parked in the West Village, where the tanned and tucked preen and leased BMWs breed like lab bunnies, Patrick Colombo's Ferré is an impeccably dressed Tuscan feedlot--razor-sharp. It's a collection of well-organized shapes and colors (amber mostly) with warming wood struts tempering chilly contemporary gusts such as the back bar, a cubist flourish of blurred glass and metal. Service isn't stellar, but the food is. Perfect gnocchi (a rarity). Desperately tender pasta with give. Flake-frenzied salmon. Zesty tomato soup with a poofy-do milk froth. Ferré's kitchen physics are executed by Kevin Ascolese, the toque who turned culinary tricks at Mi Piaci and the defunct Salve! Mi Piaci 14854 Montfort, Dallas TX 75240; Tel. 972.934.8424 Roughly translated, the name of this Far North Dallas spot means "my pleasure." And they mean it, offering pleasing service, fine Italian wines and the freshest ingredients (including some herbs grown right on their rooftop) for the rich risottos and eggless pastas. It may not be the best place for a quiet, romantic dinner--the cavernous ceiling, skylights and bare floors make noises bounce up, down and back again--but Mi Piaci features several dishes worth enduring the decibels. Among the appetizers, the fried calamari are fresh and sweet, set off by fiery pepper flakes and a tangy ragu on the side. Blanched white and green asparagus with lemon thyme and Parmesan vinaigrette is crisp and classy finger food. The entrée list is seafood-heavy, with several Italian-style mistos of clams, rock lobster, shrimp and mussels. Four kinds of risotto are made to order (meaning give Õem time) and come in portions fit for two. Fusilli with porcini mushrooms arrives butter-laden but also deliciously dark with huge bites of woodsy mushrooms. Gnocchi (Italian potato dumplings that are surprisingly hard to come by in restaurants these days) are prepared with wild boar ragu and cremini mushrooms. Dover sole is cooked tableside. For dessert, do the usual we'll-share-the-tiramisu if you must, but roasted pineapple spears with a scoop of rum gelato will send you home humming "That's Amore."
